We’ve heard it all before, breakfast is the
best meal of the day. Agreeably it is, but those extra 10 minutes in bed are always
more tempting. I know from experience that the thought of whipping up a big old
breakfast at 7:00am before work just ain’t gonna happen.
So I’ve taken matters into my own hands and
have come up with three easy options for a nutritious but quick and easy
brekkie.. but don’t forget to set your alarms!
Almond Milk Porridge and Berry Medley Topping
You Will Need:
- 1 Packet of Microwave Porridge (No Washing Up Please!)
- Almond Milk – See I told you this was healthy
- Pomegranates seeds – The Already pipped ones from the supermarket
- Handful of sliced Almonds – Your skin can thank me later
- Handful of Raspberries or what ever is in season – I love the sharp but sweet raspberry taste!
- Shaving of mint – mainly for colour but the freshness is too good
- Drizzle of Maple Syrup
How To Make:
- Microwave the porridge until smooth and creamy, I go for around 2 minutes, I then tend to add a little more almond milk after heating and stir in.
- Then add the toppings and finally drizzle the maple syrup over and eat immediately. This can be enjoyed at home or in the office if you start early.
Spicy Smashed Avocado
You Will Need:- 1 ripe avocado, I personally like the mini ones for breakfast
- 1 Lime
- Pinch of Corriander
- Chili Flakes
- Bread which makes nice toast
- Olive Oil
How To Make:
- Toast your bread, whilst this is going on smash your avocado. Some prefer to have theirs chunky or smooth, I prefer mine a bit of both.
- Once your bread is toasted, drizzle with olive oil. Then evenly add your avocado.
- Now comes the part with Chili. I like a bit of spice so add your chili and then the juice of half a lime. I like the sharpness so go easy if you’re not sure.
- Finally to garnish add coriander or simply enjoy!
